When should you use two flies?
Fishing on the Tweed week after next and wonder if i should be fishing with a dropper and if so is there a rule about type of fly on point and dropper.

I tend to use droppers only in Summer level conditions, main reason being when the water is big fishing a dropper with big rod, sunk and long line causes all sorts of extra potential for tangling problems.
Set up should have a big fly(6ish) on the dropper and a small one(10ish) on the point, follows the taper principle so the leader will unroll nicely. The distance between the dropper and the point fly should be approximately 0.75m. This reduces the chances of a fish hooked on the dropper snagging up on the tail fly.
I use a four turn water knot, much stronger than blood knot and have never(touch wood!) lost a fish due to fishing a dropper. However I have only caught grilse and the odd ten pounder using this method, would not trust it on fish well into the teens of pounds though.
You have to use your common sense, if there are lots of snags in the pool then better to stick with the single fly.

Only fish the dropper with a floating line and smallish flys ,used to fish teams on the sinkers and sink tips ,more tangles and wasted fishing with flys fishing badly !
